One-Pan Lasagna

This is such a quick and easy way to put food on the table after a long day of work! It might look like a lot of ingredients, but they all come together to make a delicious dish with plenty of leftovers.

What you need


10 oven-ready lasagna noodles, broken into bite-size pieces

1 TBSP olive oil

1 lb spicy (or mild) Italian sausage, casings removed

1/2 large onion, chopped

2 garlic cloves, crushed

1 TSP red pepper flakes, optional

28 oz can san marzano tomatoes, crushed

1/2 cup hot water

8 oz tomato sauce

2-3 oz fresh parmesan cheese, grated

8 oz mozzarella cheese, cubed

Fresh basil, chopped


Directions


1) Heat olive oil in a large skillet over medium-high eat until shimmering. Add the Italian sausage and break it into pieces with a wooden spoon. Brown the meat until every piece has a nice color. Once the meat is browned, transfer it to a paper towel-lined plate.


2) In the now empty skillet, add the onion and cook it for 3-4 minutes. Add the crushed garlic and red pepper flakes and cook for another 30 seconds.


3) Add the crushed tomatoes, cooked Italian sausage and hot water into the pan and bring it to a simmer.


4) Once simmering, add the lasagna noodles and mix them in. Pour the tomato sauce over the top of the noodles and bring it back to a simmer. Cover the pan and reduce the heat to low, cooking for 20-25 minutes, stirring every 5 minutes.


5) Once the noodles are done, add the parmesan and mozzarella cheese and recover the pan. Remove it from the heat. The residual heat from the lasagna will melt the cheese.


6) Once the cheese is melted, garnish with the chopped basil and serve!
